I have the best chicken salad recipe for you. Seriously, so delicious, perfect for a summertime lunch. And super easy to make too!
I got the inspiration for the recipe from Iowa Girl Eats and tweaked it a bit. . . You can find the original recipe here (made with Greek yogurt). And here is my version:
Honey Roasted Chicken Salad
Shredded chicken breast
3/4 cup red grape halves
2 ribs celery – diced
1/3 c honey roasted almonds
1/2 cup miracle whip
1 T honey
1 T Dijon mustard
salt and pepper to taste
Mix together shredded chicken breast (about 1 breast for 2 people – and I used a rotisserie chicken from the grocery store that I shredded while it was still warm), grape halves, celery and almonds. In a separate bowl, mix together miracle whip, honey and Dijon mustard with salt and pepper to taste. Mix all together. And serve over toast, crackers or (my favorite) in a wrap!
The key to this recipe is the honey roasted almonds. I used these:
which you can find in the produce section of the grocery store – near other salad toppers.
I used miracle whip because I like the flavor better than plain Greek yogurt. And I increased the amount of dressing because I really don’t like too dry chicken salad! –> but feel free to play around with the amount to make it the way you like.
