Last night, Scott and I drove to my parent’s house for my little sister’s birthday. Yesterday was her 23rd birthday!
We started with some yummy bread with parmesan cheese olive oil.
Then, I started on dinner. Laura really likes my Chicken Parmesan that I make, and requested that for her birthday dinner.

Dinner also included salad with my Mom’s homemade thousand island dressing and Dad grilled texas toast. YUM!

Dessert was the best part. .. Mom got a variety of mini desserts from Byerly’s, which we all shared.

Got back to Mankato late last night and headed right to bed!
Got up this morning, my latte was out of my mug from a half marathon back in January.
Then, headed to the YMCA for a treadmill run. I was that person who was waiting by the door for the YMCA to open at 10am, so I could be assured a treadmill spot. I had my pick of all the treadmills and put HGTV on the TV closest to me. It was a good morning for a run, felt pretty good through it all. Ran just over 10 miles in about 1 hr and 40 minutes.
Showered and hit the couch for some lunch .. . same as yesterday. Chili with yellow pepper slices and baby carrots. Added a few white chocolate covered strawberries.
Now, that post run fatigue is setting in. Off to watch some TV, snuggled on the couch with Abby! See you later tonight. We are headed out for a game night with some of Scott’s work friends. Hope you are having a great Sunday!
1 pkg chicken breasts
1 egg, lightly beaten
Italian seasoned breadcrumbs
1 jar of spaghetti sauce
Mozzarella and parmesan cheese
Place chicken between 2 sheets of plastic wrap and flatten to 1/4 inch thickness using meat mallet or rolling-pin.
Dip chicken in egg and dredge in crumbs.
Heat olive oil in skillet, add chicken and cook until browned and chicken is cooked through.
In a large pot, heat spaghetti sauce. As you brown the chicken, place it into the sauce when done.
Serve over pasta, if desired, sprinkle with cheese.
