Chocolate covered 7-layer cookie pan-cake with whip cream

And we made a cake this afternoon!


Chocolate covered 7-layer cookie pan-cake with whip cream.


This recipe inspiration was from the Rachel Ray magazine and was my own variation of the recipe in the magazine.

Abby was being a very good helper. . . just like Laura!


First we made the iced oatmeal cookie pan-cakes



Then, melted the chocolate into the heavy cream/butter mixture.



Pour the chocolate sauce over the layers of pan-cakes and whipped cream

It was yummy. . . I think if I were to make it again, I would layer chocolate and whipped cream instead of just putting the chocolate on top.

Don’t worry Dad – I’ll send some home with Laura tomorrow! I heard you were excited about it. Winking smile 

Chocolate covered 7-layer cookie pan-cake with whip cream

10 iced oatmeal cookies
1 1/4 cups flour
1 cup skim milk
3 large eggs
1 T unsweetened cocoa powder
1 1/2 t baking powder
1/4 t salt
6 T unsalted butter
2 cups heavy cream
9 ounces semi-sweet chocolate chips
2 T powdered sugar

Using a blender, grind the cookies at high speed. Add the flour, eggs, milk, cocoa powder, baking powder and salt. Blend until smooth. Melt 3 T of butter, add to batter until combined.

Heat a non-stick skillet over medium heat. Pour about 1/3 cup of batter in the pan and cook like a pancake. Make about 7 pancakes.

In a small saucepan, heat 3/4 cup heavy cream and 3 T butter over medium heat. Bring to a simmer, remove from heat, and stir in chocolate. Let stand 2 minutes and then whisk until smooth.

Using an electric mixer, whip 1 1/4 cup heavy cream with powdered sugar until soft peaks form.

Assemble the cake, layer pancakes, whipped cream and then top with chocolate glaze. Enjoy!

Smoothie craving swap

Abby and I spent the morning watching The Office and hanging out on the couch watching the rain.

About 10:30 I decided to get my butt off the couch and head downstairs to get my sweat on.

60 minutes on the bike and I was definitely sweaty! I finished my workout with a round of tug with Abby and planks and pushups.

For my planks and pushups, I did the following x2:

  • standard plank on forearms and toes x 60 seconds
  • standard pushups x 15
  • plank with straight arms and on toes x 60 seconds
  • triceps pushups x15
  • side plank – hold each side x45 seconds
  • downward dog pushups x 15

It was a good way to get in some strength training and ab work.

My pink socks made me happy to look at during the planks!


After a shower and folding a load of laundry, I was ready for lunch.

Repeat of yesterday: Salad of leftovers. It included:

  • lettuce mix
  • carrots
  • parmesan couscous
  • roasted asparagus
  • a few candied pecans
  • sprinkle of crushed tortilla chips for crunch
  • blue cheese dressing

It was just as good as yesterday. I really like the addition of grains – like couscous!


And just like yesterday, when I was done with the salad, I was craving some dessert.

Instead of diving head first into that open bag of candy, I made myself a yummy smoothie!


Such a better decision. . . in the mix: chobani raspberry yogurt, frozen strawberries, 1/2 frozen banana, splash of OJ. Finished with sprinkle of banana chips and chia seeds.


Perfection – and now I am full and not craving any more dessert!

I have never used a frozen banana in my smoothies before. It gave the smoothie a nice creamy texture – love it!

Abby loved the smoothie too. . . she actually got up from her ‘spot’ on the couch to come and help clean up my bowl!

Amazon wish list

Happy Saturday!

It is the perfect day for a lazy Saturday. It is raining here today and is supposed to rain all day long. Thankfully my sister is coming today and we have a movie marathon planned. . . with some cake eating too! Smile 

I started the day with a bagelwich – everything bagel thin, 2 egg whites, provolone cheese, apricot preserves.



Enjoyed with my CSL. 


I am watching The Office on Netflix Instant Play and perusing the internet this morning.

I am really liking this necklace from Stella & Dot. And trying to justify buying it! Smile 

I am also reviewing my super long wish list at Amazon and trying to decide which books to buy first.

5 guys: Take 2

Abby enjoyed the morning sunshine!


Lunch was a good mix of leftovers!

In the mix:

  • lettuce mix
  • carrots
  • blue cheese
  • craisins
  • parmesan couscous
  • roasted asparagus
  • candied walnut pieces
  • blue cheese dressing



Yum! Unfortunately, it didn’t fill me up like I wanted it to and subsequently spent the afternoon eating: 3 rice krispie bars, 2 iced oatmeal cookies (bought to use for a cake I am going to make for Laura coming tomorrow), and too many mini candy bars (opened from the bag that I bought to take to work and just haven’t taken it in yet!).

Thankfully, the fact that Scott and I were going to go for a run after he got home from work, made me stop snacking so my tummy wouldn’t hurt during the run.

Unfortunately, by the time we were ready to go running, it was threatening to rain, the wind was picking up and our beautiful sunshine day was gone!

We still took Abby and looped around Mankato State University for an easy 3 miles. The rain held off and even though we almost got blown away by the wind, it was still a good run.

After we got showered up, we headed out for dinner!

Both of us have been hungry for burgers at one time or another this week, so of course that can only mean. . . another trip to 5 Guys Burgers and Fries!


It was busy in there tonight.  . . so we loaded up our table with ketchup and waited. . .


Scott kept me entertained while we waited!

This time instead of the ‘original’ fries, we tried the ‘Cajun’ ones! They were spicy and had a little bit of a kick to them. Better than the original though.


I had the same burger I had last time, and it was just as good!


The only problem is that we left smelling like a burger joint. . . we immediately changed into our PJs when we got home!

A quick walk over to the grocery store across the street to pick up dessert!



Now we are going to enjoy dessert and some couch snuggling!

Laura is coming tomorrow and we have lots of movies planned to watch. I am also planning to make a cake – I never need much of an excuse to make dessert. Winking smile Also have plans for a run and hopefully some quality time with Scott and Abby!

Did you watch?

Did anyone else watch the Royal Wedding this morning?


I wasn’t crazy enough to get up early to watch it but of course I DVR’d it!


Kate seemed so happy and totally beautiful in her dress. . . just like any bride should be on their wedding day.

I think this wedding was especially interesting to me because they are about my age and duh, her name is my name! Who wouldn’t want to be Princess Kate? Winking smile And whoa hats! I am sorta glad that tradition didn’t make it over the pond. . . well except for the Kentucky Derby!

And I am not going to lie. . . I did fast forward thru some parts of it! My favorite part was the vows. I was looking forward to the kiss, but was a little disappointed, I think I totally missed the first one because I was multitasking: watching the wedding and reading blogs. . . I can’t blame them though, I probably would have done the same thing! It was cool that they did a 2nd kiss!

Breakfast was enjoyed after the Royal Wedding.


CSL with a barley bowl. The return of my favorite thing ever: Justin’s Maple Almond Butter. OMG soooo good, I can’t even explain it. I topped my barley with the nut butter, sprinkle of granola, and fresh strawberries.

Such a beautiful sunny morning here in MN – it is supposed to be 66 degrees today! Looking forward to our family run after work. Smile 


BTW: Here are some pics from last night and the rice krispie eating.

They were good. . . a little fruity? tasting from the multi-colored marshmallows. We still managed to eat 1/2 the pan between the two of us!

Abby tried to get in on the rice krispie action too!

Rice Krispie tastings

Happy Thursday. . . 1 day closer to Friday! Smile 

Thursday breakfast started with enjoying my caramel skim latte while catching up on The Voice. It seems like a really fun show. CeeLo Green is really funny.


Abby was trying to get some attention by bringing out some socks to entice me to play with her. It worked!

Lunch was a repeat of yesterday – salad and kashi granola bar.

After work, Scott and I took Abby for a nice 5 mile run in the sunny 51 degree weather.

We had a snack of blueberries after our run. . . yup right out of the colander!


While I was waiting for dinner to cook, I whipped up a batch of rice krispie bars. We had leftover marshmallows from Scott’s surprise birthday party in March that I needed to use.

Melt the margarine (3T), mix in 1 package of marshmallows.


Taste multiple times to make sure it tastes ok. Winking smile 

Mix with 6 cups of rice krispies.


Try to hold off on eating any bars until after dinner. .  .


Dinner was awesome!

I also had help in the kitchen. ..


Pouting after ‘help’ didn’t lead to any treats or dropped food!


I roasted some broccoli and cauliflower in a 400 degree oven for 20 minutes. I lightly spinkled olive oil and kosher salt on them before putting them in the oven.



I used this olive oil that Laura brought me from California. Isn’t it pretty?


We also had mashed sweet potatoes, from Let’s Dish and chicken cordon bleu (frozen and bought on a previous trip to Sam’s Club).



Someone’s nose was very close to dinner!


Now off to taste the rice krispie bars! This is the first time I have ever made them with colored marshmallows (bought for the party, ‘cause I thought they would be more fun than boring white!).

Nothing very exciting happened today. . .

CSL from Caribou for breakfast. Haven’t been doing well the past few days with eating something more for breakfast other than my latte. I have some frosted mini wheats in my work bag for breakfast tomorrow to try to change that around!

Lunch was a salad from the hospital cafeteria.  . . a nice spring mix lettuce, carrots, broccoli, cauliflower, snap peas, turkey, green olives, pickles, parmesan cheese, croutons. With honey mustard dressing. yum! A kashi granola bar for ‘dessert.’

Came home after work, hopped on the bike downstairs for a quick 30 minute ride.

Then, Scott and I headed to:

to celebrate. Scott had a big presentation at work today, so we decided we should go out to dinner to celebrate like we did last week after my presentation.

We shared soft pretzels with spicy cheese dip for a starter.


Then, I got 6 honey BBQ traditional wings. I  totally forgot to take a picture until 2 wings were eaten! Smile 


Scott got 6 spicy garlic. We each swapped 1 wing – man, his were SPICY – my mouth was en fuego! Winking smile

We headed home after dinner, I quickly changed into my PJs and hit up the couch. Scott brought me the perfect end to the evening: ice cream!

Chocolate chip ice cream with white chocolate chips and walnuts.


Someone is very interested in being my buddy when I have ice cream!



What my ice cream looks like when I finally eat it. . . I mix and mix and mix until it is smooth and creamy.


Sometimes Abby resorts to pouting if I am taking too long eating my ice cream.


But, it usually pays off for her.



Now, off to watch Survivor – go Boston Rob!
