This evening, like most Mondays, I went to the YMCA to teach CTI – Cardio Tone Interval. This night was a little different. Every year the YMCA has a ‘Shape Up’ challenge in the spring. Everyone competes for ‘points’ by working out. And during that time, they also have some classes at the YMCA that you can get ‘double points’ by attending. Tonight, my class was a ‘double points’ class – so I had triple the amount that I usually have! It was fun to see the whole aerobics room full.
Here is the class we did tonight: using a mat and a set of weights – 8# for me.
Jog 40 seconds, sprint high knees 20 seconds
Squat with front kick
Running arms with weights
Pushups x 10
V –sit with weight
Reverse chest flys, upright row, overhead press – each move 10 reps x 2
Plank hold x 30 seconds
Dinner was quick and easy thanks to leftovers. Scott grilled chicken that I had marinated in teriyaki sauce last night for dinner.
We had the chicken on a sandwich with grilled pineapple rings and swiss cheese.
So, tonight, I took the leftover chicken, pineapple and swiss cheese and put it over lettuce to make a yummy salad. I also added orange bell pepper and carrots. Topped with blue cheese dressing. Enjoyed along with some tortilla chips and peach mango salsa.
Keeping track of my fruits and veggies for the day: broccoli at lunch +1, salad for dinner +2, salsa +1
Dessert: Cookies from baking yesterday. In addition to the chocolate chip ones from frozen dough, I also made some flourless oatmeal pb cookies with dark chocolate dreams pb from Peanut Butter and Co.
Flourless Oatmeal PB cookies (from Carrots’n’Cake)
1 1/4 cup oats
1/4 cup sugar
1/4 cup peanut butter
1/2 t baking powder
2 T butter – softened
Mix all ingredients, heat oven to 350 degrees. Drop rounded tablespoons on greased cookie sheet. Bake 12-1 5 minutes. Enjoy!
