Cookie Cake Celebration

I can’t believe we are already on week 3 of our CSA!

This week:

More lettuce: 2 bags!


Shelling peas. . . can’t wait to use these in salads again this week!


More kohlrabi!


Strawberries – yum!


Green onions – getting bigger!


So far the CSA has been working out really well! I am loving all the fresh salad stuff. It is also fun to be getting new to us veggies to check out and broaden our horizons!

Thursday was my very last day of residency. I don’t start my full time family practice job until August so I am looking forward to July and having time to hang out and get some things done around the house!

Scott took me to Red Lobster to celebrate last night. . . I had been craving crab legs (thanks to Pink Runner!)

This was Scott’s first time to Red Lobster! He isn’t really into seafood – only sorta likes fish. . .

He was excited about finally eating the cheddar bay biscuits while they were warm. He has had them leftover from when his parent’s would go to Red Lobster and then bring them home.


We also had salads. .  .


And I got my snow crab legs!


It was a nice dinner!

Scott also surprised me with a graduation present!


He knows me so well! Smile

We also had cookie cake.


Have you ever heard of cookie cake??? Oh. My. Gosh. You have to check it out! We get ours from our local Hy-Vee grocery store. I got one for a friend’s bridal shower a few weeks ago. I had to get creative because she doesn’t like cake! So strange, I know! So, I had to find an alternative. I was originally going to get cheesecake but there aren’t any good places in Mankato to get any. So, I got cookie cake because she likes cookies! Normally, the store makes the base with chocolate chip cookie dough, but I requested M&M cookie, because I knew that she would like that the most. Topped with buttercream frosting!


So good. The cookie is chewy and moist and the frosting puts you into a sugar coma = love! Since the wedding shower, we convinced a co-worker to get one for a graduation potluck at work. Scott ordered one for his works potluck and he got me one for my last day! It is seriously that good! Smile
