I have had frozen tilapia fillets in the freezer for quite some time. We bought a big bag of them at Sam’s Club a while ago, but other than baking them in the oven with a little seasoning, I haven’t been too adventurous with them. Since they have been in the freezer for so long, I finally decided I needed to find a recipe to use them up. I always like parmesan crusted fish at restaurants and have heard of using panko as a light breading on fish before, so after a little googling. . . I put together this recipe and made Panko parmesan crusted tilapia.
2 tilapia fillets
1/2 cup Parmesan
1/2 cup Panko
1/2 t garlic powder
salt and pepper
Thaw tilapia fillets (if frozen) and pat dry with a paper towel.
Season with salt and pepper. I then cut each fillet in half to make then easier to work with. Mix parmesan, panko and garlic powder together in a bowl. Add egg to another bowl. And flour to a 3rd bowl.
Heat about 2 T olive oil in a skillet. Cook fish about 3-4 minutes per side or until golden brown and fish is flaky.
The outside panko parmesan crust is crunchy, flavorful, yet light enough for the delicate flavor of tilapia. Perfect with a little bit of tartar sauce for dipping.
A great Sunday night dinner and use for frozen tilapia fillets. . .
