I have the best chicken salad recipe for you. Seriously, so delicious, perfect for a summertime lunch. And super easy to make too!
I got the inspiration for the recipe from Iowa Girl Eats and tweaked it a bit. . . You can find the original recipe here (made with Greek yogurt). And here is my version:
Honey Roasted Chicken Salad
Shredded chicken breast
3/4 cup red grape halves
2 ribs celery – diced
1/3 c honey roasted almonds
1/2 cup miracle whip
1 T honey
1 T Dijon mustard
salt and pepper to taste
Mix together shredded chicken breast (about 1 breast for 2 people – and I used a rotisserie chicken from the grocery store that I shredded while it was still warm), grape halves, celery and almonds. In a separate bowl, mix together miracle whip, honey and Dijon mustard with salt and pepper to taste. Mix all together. And serve over toast, crackers or (my favorite) in a wrap!
The key to this recipe is the honey roasted almonds. I used these:
which you can find in the produce section of the grocery store – near other salad toppers.
I used miracle whip because I like the flavor better than plain Greek yogurt. And I increased the amount of dressing because I really don’t like too dry chicken salad! –> but feel free to play around with the amount to make it the way you like.
When Luke was 10 days old, we took him to Wisconsin to have newborn photos taken. We went to Jodee, who also did our wedding photos!

Is it just me or are there meals that just taste better during summer? And that you only eat during the hot months of the year? There are quite a few meals that we only eat during summertime, as well as a few, that just taste better during the hot, humid days of summer!
So, here is My Summer Dinner List. . . all the meals that are eaten during summer and taste better too!
Smoothies – the more fruit the better! Love them topped with coconut butter and chia seeds.
Salads – fresh lettuce and veggies from the Famer’s market, roasted corn fresh from the cob and topped with grilled anything!
Grilling: Burgers, Brats, Chicken, Steak
BLTs – fresh tomatoes, lettuce, crisp bacon slices – all on toasted white bread – YUM!
Chicken salad – perfect for summertime lunches – served over letttuce, in a sandwich or wrap.
Gazpacho – I have a recipe for mango gazpacho that I am hoping to make this summer!

I found this recipe on All Recipes a while ago and it is always my go to banana bread (or muffin) recipe.
1/2 c margarine
1 c white sugar
1 1/2 cups mashed bananas ( about 3)
2 cups flour
1 t baking soda
Preheat oven to 350 degrees. Spray baking pan with PAM baking spray.
Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and baking soda, stirring until just combined. (You can add in chopped nuts or chocolate chips too if you want. I usually will add about 1/2 cup of walnuts.)
Pour into prepared pan and bake for about an hour* (until a toothpick comes out clean). Remove from pan, let cool.
*About an hour for a loaf pan, 30 minutes for muffins –> bake until golden brown on top and a toothpick comes out clean.
My favorite thing that Luke has started doing. . .
After eating, when I put him on my shoulder to burp. . . if it is near nap time, he snuggles into my neck and makes the most adorable baby cooing sounds –> LOVE!

I can’t believe how much he has grown and changed already!
Life with a 2 month old includes:
*Lots of smiles
*Especially likes Boom Chicka Boom and being called ‘bunky baby’
*Likes standing in his bouncer chair and sleeping in his swing
*Loves sucking on his wrist and hand
*And kicking his legs
*And staring at the mobile on the bouncer chair and swing (but for only about 5 minutes and then he gets bored!)
*Just started being able to sit in the bumbo chair
*Does not like wet diapers, being hungry or tired!
*Sleeping anywhere from 3-6 hours at a time. . . 6 hours once this past week!
*2 month doctor appointment tomorrow with immunizations 😦
