Honey Roasted Chicken Salad

I have the best chicken salad recipe for you. Seriously, so delicious, perfect for a summertime lunch. And super easy to make too!


I got the inspiration for the recipe from Iowa Girl Eats and tweaked it a bit. . . You can find the original recipe here (made with Greek yogurt). And here is my version:

Honey Roasted Chicken Salad

Shredded chicken breast
3/4 cup red grape halves
2 ribs celery – diced
1/3 c honey roasted almonds
1/2 cup miracle whip
1 T honey
1 T Dijon mustard
salt and pepper to taste

Mix together shredded chicken breast (about 1 breast for 2 people – and I used a rotisserie chicken from the grocery store that I shredded while it was still warm), grape halves, celery and almonds. In a separate bowl, mix together miracle whip, honey and Dijon mustard with salt and pepper to taste. Mix all together. And serve over toast, crackers or (my favorite) in a wrap!


The key to this recipe is the honey roasted almonds. I used these:


which you can find in the produce section of the grocery store – near other salad toppers.

I used miracle whip because I like the flavor better than plain Greek yogurt. And I increased the amount of dressing because I really don’t like too dry chicken salad! –> but feel free to play around with the amount to make it the way you like. Winking smile

  1. My Mom says if you put chicken in the food processor for just a second it will shred it perfectly for chicken salad!
