Vegas Baby Vegas!

Scott and I recently went to Las Vegas for a long weekend (Thursday to Monday). I was there for a medical conference on Women’s Health and Scott tagged along for a little vacation before the baby comes in April.

I had never been to Vegas before so I was super stoked about the trip.

We stayed at the Bellagio, which was fabulous!

We had a view of the fountains… You could turn your TV onto the “fountain channel” and when the fountains were on, you could listen to the music that goes with the fountain show. That was the best part of the trip. Sitting next to each other in our hotel room, watching the fountains and the people through the floor to ceiling window.

Our other favorite thing: blueberry French toast at Mon Ami Gabi at the Paris Hotel.

I had done some looking at other people’s blogs before going to Vegas for recommendations on what to do while we were there and everyone said to eat at this restaurant for breakfast. It was so good that we ate there on Sunday and Monday for breakfast!

Other activities we did. . .

· Walked around lots!

· Shopping inside Caesar’s Palace

· Frozen Hot Chocolate at Serendipity 3

· Crazy desserts at the Sugar Factory

· Burger Bar at Mandalay Bay

· Fleur (by Hubert Keller) at Mandalay Bay

· LOVE The Beatles Love Cirque du Soleil show at Mirage

· Watching the lions at the MGM Grand

· Lunch buffet at Bellagio

Also, since we knew we were going to Vegas in January, for Christmas I gave Scott a gift certificate for an Exotics Racing experience.

We went to the Las Vegas Outdoor Motor Speedway and Scott got to drive a Ferrari F430!

It was a great trip overall!

My recommendations for anyone going to Vegas:

· Bellagio Hotel with a fountain view

· Mon Ami Gabi blueberry French toast

· Watching the lions at MGM Grand

· Cirque du Soleil show – LOVE was amazing!

· Walking around and checking out all the hotels

The Great Minnesota Get-Together

Yesterday, Scott and I went to the Minnesota State Fair.

It was the perfect day to go. . . middle of the week and sprinkling rain on and off really kept the crowds down so there was actually room to walk!

And our ‘new’ fair food this year: pig licker –> chocolate covered bacon sprinkled with sea salt

It was interesting. . . it tasted like bacon with chocolate on it! Smile Both Scott and I said we didn’t think we would get it again, but it was a fun thing to try!

Also eaten but no pictures: Nitrogen frozen vanilla ice cream – so rich and creamy and Scott got a vanilla milk shake from the University of Minnesota Moo booth.

Laura and her boyfriend got to the fair just before we had to leave, so I was able to snag a few mini doughnuts from her!

Minneopa Falls Picnic

This afternoon, Scott and I took Abby to Minneopa State Park, which is just outside Mankato, for a picnic lunch, a game of fetch and waterfall admiring.  ..

HOT Lake weekend

Oh.my.goodness! It was HOT this weekend. Upper 90s and humid all weekend. Add a Lake place with no air conditioning = very hot! Thankfully, the Lake was about 10 steps from the front door!

My Mom makes the b.e.s.t. lemon cake! It was one of the highlights of the weekend.

The next day, Laura and her boyfriend, came over in the boat for some water skiing.

It was a great long weekend! But, it was equally as awesome to get home last night to air conditioning!!!

4th of July Weekend

This weekend, Scott and I took Abby to Wisconsin to my parent’s Lake place.

It was soooo hot on Friday – 98 degrees! And the lake place doesn’t have AC! Thankfully, it rained at about 9pm and dropped the temp about 20 degrees so we were able to sleep fairly comfortably.

They just re-built a new place.  ..  so some things need to still be done: i.e. the front lawn!

On Saturday, we took Abby for a ride in the car to get an iced latte for me, from this super cute coffee house in Chippewa Falls.

We also stopped at Klinger’s – this farm market store and picked up some fresh sweet corn for dinner.

Saturday was spent going on a long bike ride with Scott and Dad and spending some time on the lake.

It was mid- 80s and gorgeous out! People started setting off fireworks on Saturday night all around the Lake. They also did more on Sunday night too. . . the dogs did not like them! Abby and Ellie spent time plastered together in the corners and against the walls. . . which is very unusual because they don’t really seem to like each other and stay away from each other most of the time!

Sunday morning Scott and I took Dad and Abby to the tennis courts. Abby had so much fun chasing all the tennis balls. Too much fun – she actually wore off one of her back pads on her paw! She spent most of Sunday limping because it was hurting her – thankfully she seems to be doing better today!

Over the course of the weekend, Scott and I ate a lot of cookie cake! My Dad doesn’t like frosting so Scott always got his extra frosting. . . One plate was ridiculous!

Last night, there were so many people in our neighborhood (illegally) setting off fireworks.  .. so we just sat on the couch watching them go off. Abby doesn’t like fireworks, so she spent the evening snuggled between us on the couch! Scott actually had to carry her outside to go to the bathroom before bed, because she was too scared to go outside! Poor girl. Thankfully fireworks are done for another year now!

We also watched The A-Team last night. . . really good movie! I didn’t think I would like it, watched it so that I could get Scott to watch more chick flicks with me, but I really enjoyed it. Smile

Country Fest 2011!!!

Wow. . . what a great weekend! Laura and I went to our 5th annual trip to Country Fest in Cadott, Wisconsin.

It is a four day country music festival (Thursday thru Sunday). Unfortunately, I had to work on Friday, so I had to miss Thursday night. . . Laura went with my other sister, Jenny. It sounded like they had a lot of fun watching Gretchen Wilson, Lonestar and Trace Adkins. I also heard that they shared a yummy funnel cake! Winking smile

So, I was super excited to head up to the fest on Friday after work!

Leinenkugel’s Berry Weiss Beer. I don’t love beer, but this one has a slight sweet berry flavor which I love.

Laura and I always get VIP seats which includes all the beer you want, closer seats, dinner each night, and closer access to the stage for awesome pictures.

She was super cute and told us about how she has gotten married (to Blake Shelton) since she was at Country Fest last time!

Each show is a little over an hour and then we have about an hour in between shows too. . . which leads to lots of photo taking!

Another perk of Fest is that Cadott is about 40 minutes away from my parent’s lake place. . . so instead of having to stay and camp for the weekend. . . we drive back and forth each day. That way we get to sleep on a real bed and play on the lake during the day!

Saturday night we also got a yummy snack: Maple nut ice cream. Seriously the best ice cream cone I have maybe ever had. . . fresh ice cream made local in WI. YUM!

Barley ‘n yogurt

Last night I put 1/4 cup barley into my raspberry chobani yogurt and let it hang out in the fridge overnight. I got this idea from Julie.

I really like barley in soups and salads, so I thought I might give it a try for breakfast.

I took my first bite this morning, and I wasn’t impressed, but I decided to give it another couple of bites – and I am glad I did. The barley is softened, but still has texture, a nice nutty flavor.

I added some sliced honey roasted almonds on top – which made it ever better!

I will definitely be having this breakfast again.

Back to work today. Even though it is only a 2 day work week, it is still sad to have our vacation over!

It helps to remember all the fun we had on our road trip!
