And things were going so well. . .

With the half marathon less than a month away and I was having some of the best running I have had in the recent past. .. it was really only a matter of time before this happened.

An injury.


I was out on a nice run, the sun was shinning, there was a slight breeze, and I was feeling good. A little too good. . . I was running before I picked Luke up from daycare so I had exactly 55 minutes before I had to be back at daycare to pick him up. And we have been looking at houses in St. Peter, thinking about a move sometime in the future. And I wanted to run past this house we saw online. And it took me 28 minutes to get there. Ok, no big deal, I can just pick up the pace a little bit to get back on time. . . and I had given myself a few minute buffer just in case too. But I was running faster than I normally do, but again, NBD, because I was feeling good. Then BAM . . . sharp pain in my calf. I had to stop and walk. Totally strained my calf muscle! I hobbled back to daycare to pick up Luke and thankfully made it on time. . . and I took a few days off from running. . . but since then – every time I go running – it hurts!

Scott and I did run 11.1 miles on Sunday. And it felt fine for about the first 6 miles and then started to feel tight and strained. I am a little slow, so I ran again on Tuesday for 4 miles and it hurt the whole time!

I guess I keep hoping that running will help stretch it out, but no luck! Now we are 18 days away from the half marathon and I don’t want to have to deal with this injury during it! Boo. So, I am going to do relative rest, ibuprofen, ice, heat, stretching like crazy. No more long runs til the half marathon. . . and don’t push it thru pain on short runs. I am thinking I might try some incline walking on the treadmill later this week to get in a workout but not run until at least this weekend.

Any other suggestions on dealing with this?

Think happy get better quick thoughts for my running for me please!

Foodie Pen Pal–September

Another month, another foodie pen pal. After my great experience with August, I decided to participate again!

This time my foodie pen pal was from Puerto Rico! Check out the super cute mailing label she made!
Ilka was super friendly and sent me a great box. IMG_1637
She told me that her daughter, Ilka Vanessa, and her had lots of fun putting it together.

Along with coffee! And she put super cute notes on everything. Smile

And perhaps the thing I am the most excited about! A tostonera … to make tostones – fried plantains.


You put the slices plantains in the tostonera to flatten then before frying!

Thank you thank you thank you Ilka (and Ilka Vanessa!) for this super awesome and amazing box. I am so excited to try everything. I can tell you both put a lot of time, thought and effort into putting this box together and it is very appreciated. The little gift for Luke was especially thoughtful. Smile I hope your foodie pen pal box was just as awesome!

Weekend Update: 9/30/12

Another weekend that went by way too fast. . . thankfully we fit a lot of stuff into it! An early post this week because tomorrow is the scheduled Foodie Pen Pal post for October!

Best-ever chocolate chip cookies

Here is the original post with the recipe from Janae. .  .

The key to these cookies is the milk chocolate chips: Ghirardelli –> super delicious, silky, luscious chocolate that just melts in your mouth. IMG_1436

The perfect cookie to make on Saturday night while your husband is away at a ALL- WEEKEND bachelor party (don’t get me started) and the baby is sleeping. Winking smile 



Best-Ever Chocolate Chip Cookies
1 cup butter or margarine, softened
3/4 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
3 cups flour
3/4 teaspoon salt
3/4 teaspoon baking soda

1 bag chocolate chips (Ghirardelli milk chocolate chips are the key!)

Cream together butter, sugars, eggs, and vanilla.


In a separate bowl sift together flour, salt, and baking soda. Add to creamed mixture and beat well.


Stir in chocolate chips. **If you L.O.V.E. cookie dough like I do (I know, I know, it has raw eggs and you shouldn’t eat it. . . but sometimes you gotta LIVE!). .  anyway. . . I always put some in a small container and put in the fridge so I can have some more another day after all the cookies are made. I got this idea after my husband made cookies one day while I wasn’t home and I didn’t get ANY cookie dough – oh the horror  – it was awful, I don’t want to talk about it. Anyway, since then, he always sets aside a little container for me and now I do it for myself too. Smile 


Drop onto greased cookie sheet by heaping tablespoons. Bake at 350 degrees F. for 8-10 minutes until lightly browned.


Makes about 5 dozen.


Seriously. .. go make these now. You can thank me (or Janae) later! Winking smile

5 months!

My little boy isn’t so little anymore. . . weighing in at about 19 pounds and rapidly growing thru all of this clothes! And already 5 months old – I. just. can’t. believe. it.

New things this month:

Turning over from back to front (haven’t quite figured out how to go the other direction yet)

Sleeping *mostly* thru the night in his own crib (still gets up for 1-2 wet diapers and 1 feeding)

Started eating baby cereal last week and loving it

Loves stroller rides, his bouncer, and petting Abby

Give lots of smiles and laughs all day long!

As I was rocking him before bed earlier this week. . .I was smelling his wonderful baby smell, feeling his soft hair against my cheek, and his little body against my chest.. . And just thinking to myself how wonderful life with this little person is, how much I love him and how I just cannot imagine our life without him. It is just amazing how one little baby can change your entire life and oh so wonderful!

Tater Tot Hot Dish

Want to make the most traditional Minnesota dish that guarantees you will be saying “Uff Da” before you know it?

Well.. . look no further than this dish.


Ground beef mixed with cream of mushroom soup, add in veggies and top with as many tater tots as you can fit on top. Rich and creamy with the cream of mushroom ‘sauce’ and perfect with the addition of crunch, slightly salty tater tots on top. Perfect served with gobs of ketchup. (As most hot dishes are!)

And no – this is not a casserole – if you are from MN – then this is a hot dish!

And it is really so so so easy to make. Winking smile 

The ingredients:

1 lb ground beef

1 large onion – diced
1 can cream of mushroom soup
1 –3 cans of veggies

1 bag of tater tots


Start with 1 lb ground beef and diced onion. Sauté over medium heat until onions are translucent and soft and ground beef is cooked through.


Remove from heat. Add can of cream of mushroom soup. (Cream of mushroom soup is the most traditional – but you can really use any cream soup.)


Be careful using your awesome pink spatula to get the soup out of the can, because the sharp edges will cut the spatula and make you sad. Sad smile 


Then, move on, because you know if you complain to your sister about it, you might get a new one at Christmas. Winking smile

Drain the veggies.


Add to the mix of ground beef, onion and soup. *Tip – you can use any amount of veggies you want. . . at least 1 can, but you can use up to 3 cans if you like your veggies. Smile You can also use fresh or frozen veggies too.


Mix all together and put in 9×13 pan.


And it’s ok to take out some of the mixture before you add other veggies, in case you only like corn in yours. . .


Perfect to make and take to a neighbors house for a new baby or after an accident. I took this pan over to our next door neighbors house after the Dad had a bad car accident.


But of course, kept some for us for dinner too. Smile 


Heat oven to 350 degrees. Top with a layer of tater tots. (you probably won’t use a whole bag)

And cook for about 30 minutes or until the tots are golden brown.


And enjoy! With lots of ketchup because that it the Minnesota way. Smile
